LEVEL ONE

CORE MACROBIOTIC STUDIES/12 Weeks

 

Level One will introduce students to the principles of macrobiotic living for health and healing with special focus on selecting and preparing foods according to macrobiotic guidelines. Students will gain a firm foundation for practicing macrobiotics in their own lives as the basis for their own personal health and well-being. Studies of macrobiotic diagnosis and understanding of meridians are included.

Class Descriptions 

Class 1

HEALING WITH ENERGY

The physical and energetic structure of the human body, including meridians and chakras. Health as the free flow of life energy and dietary and lifestyle practices to further the smooth and active flow of life energy. An explanation of the energetic structure found throughout nature. The foundation for studies of macrobiotic healing.

 

Class 2

MACROBIOTIC DIET

A detailed explanation of the foods in the standard macrobiotic diet, beginning with brown rice and other cereal grains, miso and other soups, fresh local vegetables, beans and bean products, sea vegetables, and supplementary foods. A discussion of the wide variety of foods recommended in a plant-based diet.

 

Class 3

MACROBIOTIC DIET ADJUSTMENTS

The endlessly flexible principles for adapting the macrobiotic diet to a wide range of circumstances, including climate, environment, season, age, gender, activity, personal condition, and other factors.

 

Class 4

MACROBIOTIC NUTRITION

An explanation of the physical and energetic dimensions of human nutrition using the macrobiotic principles of dynamic balance as the foundation. Studies of the 1 to 7 ratio as it relates to the balance between minerals, proteins, carbohydrates, fats and oils, vitamins and other essential nutrients. Study of both the qualitative and quantitative aspects of optimal human nutrition.

  

Class 5

THE FIVE TRANSFORMATIONS

A study of the universal cycle of change known as the five transformations. An explanation of the five transformations cycle as a development of the yin yang principle as it appears in the cycles of the seasons, times of day, monthly lunar cycles, and in the rhythms of nature and the human body. A preamble to in-depth studies of health and healing.

 

Class 6

HUMAN FORM, FUNCTION & ENERGY

Continuation of the five transformations study. The human body according to yin and yang, including classification of the major organ pairs into five stages corresponding to the five transformations. An explanation of why the organs are classified as such.

 

Class 7

MACROBIOTIC FOOD AS MEDICINE

Part 3 of the study of the five transformations. Understanding the major categories of foods within the macrobiotic diet in terms of the five transformation energies, including whole grains, beans, vegetables, sea vegetables, and supplementary food. How to use the five transformations in selecting foods for health and healing, including a study of cooking methods to accelerate or reduce energy effects.

 

Class 8

YIN YANG TUTORIAL 1

A study of yin and yang, the universal principles of harmony and balance, in the development of human form and function, especially in relation to the selection of daily foods. Examination of the role of cereal grains and cooking in the development of the human species, including culture and civilization. Study of the spatial relation between the forces of yin (expansion) and yang (contraction) found on earth and how it determines the ideal food pattern for health and well being.

 

Class 9

YIN YANG TUTORIAL 2

Yin extremes. Study of how highly expansive foods such as refined sugar, strong spices, dairy foods, chemical pesticides, food additives, antibiotics, and artificial hormones impact health and well being.

 

Class 10

YIN YANG TUTORIAL 3

Yang extremes. Study of how highly contractive foods such as processed and grilled meat, factory-farmed poultry, eggs, cheese, and other foods high in saturated fat and cholesterol impact health and well being.

 

Class 11

STUDY GUIDE AND REVIEW

A review of the Level One Curriculum including a Study Guide to help prepare students for the final exam.

 

Class 12

LEVEL ONE TEST

An online test based on the Level One Curriculum, including a test review and student presentations on topics related to their study of macrobiotics.

 

Level One Schedule, Hours, and Requirements

Digital Studies (Audio and Video): 15 to 20 hours

Live Studies with Edward Esko: Once per week for 12 weeks/2 hours per session

 

 Requirements

* Practice of the Macrobiotic Way of Life

* Study of 3 books by Michio Kushi and/or associates

 

Certification

Students who complete the Level One Curriculum of Study will receive a Certificate from the International Macrobiotic Institute (IMI) signed by Edward Esko, Founder.
